Ingredients:
½
c. butter (softened)
1 c. sugar
1 c. sugar
1
egg
¼
c. molasses
2
c. flour
2
tsp. dried ginger
2
tsp salt (I used coarse Mediterranean Sea Salt)
1
tsp. cinnamon
2
tsp baking soda
Cream
butter and sugar. Beat in egg. Stir in molasses. Add dry ingredients; mix well.
Refrigerate
dough at least 1 hour.
Form
1 inch balls and roll in sugar. Place on
ungreased cookie sheet 1 inch apart.
Bake
at 350 degrees for 9 to 11 minutes. Cool
on rack.
(I
like them chewy so I under cook them a bit.)
